We are hiring several people for two positions at a new restaurant located in Closter, NJ

APPRENTICE MERMMELIER - Assistant to Master Mermmelier Kevin Joseph. Execute and innovate at the highest level with oysters, other shellfish, crustaceans and small fin fish. DETAILS BELOW.

OYSTER SHUCKER / PREP - CHEF - Assistant to Master Mermmelier & Apprentice Mermmelier. Shuck oysters fast & clean for platters for table service, prep for other raw bar dishes, plate other raw bar dishes for table service.

DETAILS: APPRENTICE MERMMELIER
Oyster Shucker & Apprentice Mermmelier needed to assist in Raw Bar Operations. Work and learn in tandem with Master Mermmelier Kevin Joseph. A Mermmelier is to oysters what a Sommelier is to wine, barista is to coffee or a ciccerone is to beer - an expert in all areas of production, distribution, sourcing, storage, service, presentation and much more. This is a great opportunity to learn and grow in the hospitality / culinary industry with a focus on shellfish and small fin fish species. Additionally, the opportunity exists to take over the role of Master Mermmelier for this Raw Bar and manage it’s daily operations in a November 2019 time frame.

RESPONSIBILITIES

1. Assist in sourcing & ordering oysters & other product
2. Shuck Oysters & Clams for Table Service / Platters
3. Properly Manage Oyster Inventory
4. Source, Prep & Manage Ingredients for Accoutrement (Sauces & Dressings)
5. Source, Prep & Execute Small Plate Raw Dishes (Ceviche, Crudo...etc)
6. Hire and train other chefs to assist in Raw Bar Operations
7. Help with off site raw bar catering

EXPERIENCE & QUALIFICATIONS

This is a job for a culinary professional with some shucking, prep and other food preparation experience. Seafood experience and a passion for oysters, shellfish, crustaceans and small fin fish is a plus. Ideal candidates are eager to learn and BECOME an expert in all aspects of oyster, shellfish and crustacean sourcing, prepping, storage and presentation. They will also have a keen interest in exploring and learning about using lesser known species of smaller fin fish in creative raw preparations. Good ability in English is a must as this position will likely require interaction with guests at the raw bar.

PAY
$14-$19 per hour, depending on your experience

HOURS
8-10 hours per day, 5-7 days a week
